Summer hit with a heat wave this year, which triggered my little obsession with infused water. It's an extra refreshing way to stay hydrated and a cooling alternative when it's too hot to sip on herbal tea.
Plus, with all the rain and sun we've had, I've been exploring different ways to use up the trimmings of my fervently growing mint. Infusing fresh-picked sprigs in water with cucumber, lemon, and lime has quickly become one of my go-to uses and favourite infusions.
With a bright citrusy flavour complemented by cooling cucumber and crisp mint, it makes a delightful spring and summer drink that's flavourful, alkalizing, and sugar-free.
Is Infused Cucumber Water Healthy?

How to Make Cucumber Lime Water with Lemon & Fresh Mint
Making this infused water is quick and simple, only requiring a few minutes of hands-on time. It can also be enjoyed after a few minutes of infusing or refrigerated for a longer infusion.
What You Will Need
Equipment
- Juice pitcher that holds at least 64 oz (½ gallon).
Ingredients
- Filtered Water for the purest flavour and to reduce exposure to toxins. You can also use sparkling spring water for an extra special touch.
- Lemon offers a light citrus flavour.
- Lime offers a delicious punch of tangy flavour.
- Cucumber adds a subtle flavour that's fresh, cool and crisp.
- Fresh mint provides a cooling and refreshing twist that complements and mingles with the other flavours.
- Ice (optional) makes it cold and extra refreshing on hot days. It can also be enjoyed without ice to support healthy digestion.
Step 1: Rinse & Slice
First, rinse the lemon, lime, cucumber and mint well. Then, cut the lemon, lime and cucumber into thin slices. For a more elegant touch, you can use a peeler to slice the cucumber longways. However, I find it quickest and easiest to slice the cucumber into rounds.
If the lemons and limes are extra seedy or if you're making this for kids to enjoy as well, you can deseed the slices before adding them to the pitcher.
Step 2: Infuse
Layer the sliced lemon, lime and cucumber in a pitcher. Then, add the sprigs of fresh mint. You can add ice at this point or pour the infused water over ice afterwards.
Next, pour in the filtered water and let it infuse for at least 2 to 5 minutes before enjoying. To make the fruit go further, you can continue to top up the water as you drink. However, it's best to discard after 2 hours of sitting at room temperature.
For a longer infusion, seal the pitcher and refrigerate for up to 2 hours before straining out the fruit. Once the fruit is strained, the water can be kept in the fridge for up to 2 days.
Step 3: Garnish
If serving this at a brunch, lunch or dinner party, you can add an extra garnish of mint to the top of the pitcher.
Or pour the infused water into glasses garnished with extra slices of cucumber, lime or lemon.
My Top Tips
- Remove the lemon and lime after 30 minutes to 1 hour if you prefer a more subtle flavour. Infuse in fridge for up to 2 hours if you prefer a strong citrus flavour.
- Use organic produce to reduce exposure to harmful pesticides and herbicides. Lemons and limes are often waxed, so organic is the best choice, especially when using the rind.
Substitutions & Variations
Add more or less lemon, lime, cucumber or mint if you prefer a stronger or milder flavour. You can also adjust the ratio of the ingredients to your taste.
Sparkling water can be used to make a fizzy drink for extra-special occasions or a mocktail-like beverage.
Fresh lemon balm can be used if you don't like the taste of mint. It will enhance the lemon flavour while providing similar benefits to mint.
Make it for one by adding 3 lemon slices, 2 lime slices and 6 - 7 baby cucumber slices to a 16oz jar or glass. Fill with water and top with a sprig of mint. Start sipping right away, take it on the go or seal and refrigerate to let it infuse for up to 2 hours.

How Long Does Infused Cucumber Water Last?
As mentioned above, this water can be sealed and left in the refrigerator to infuse for up to 2 hours. The fruit can then be strained out, and the water can be kept in the fridge for up to 2 days if it is well-sealed.
That being said, if the water and fruit have been sitting at room temperature for longer than 2 hours, it is best to discard them both and start with a new batch.
I find that infusing and storing this water in a glass pitcher or jar produces the best flavour. It's also ideal to avoid toxins that can leach from plastic.
