    Okay, I have to admit, I have yet to perfect a healthy pie crust recipe. Every dairy and gluten-free version I've tried just hasn't cut it.

    For now, I just had to share this Easy Homemade Peach Pie Filling because it's seriously so good and so easy! Plus, you can make tons of yummy treats with it, even without any pie or pastry crust.

    What Makes This Peach Pie Filling Healthy?

    As mentioned above, this peach pie filling has a healthier twist. Its sweetness comes from only peaches and pure maple syrup. Which means it contains no refined sugars. It's also thickened with arrowroot rather than cornstarch or wheat flour, making it an excellent anti-inflammatory option.

    Packed with fresh, juicy peaches, a hint of cinnamon and that classic ooey-gooey texture, you would never guess this Peach Pie Filling is made with alternative ingredients.

    Excellent for eye health. Peaches are rich in lutein, a carotenoid that is known for its protective properties against macular degeneration.

    Great for skin health. Peaches are a great source of vitamins C and A, both of which can contribute to healthy, youthful skin.

    How to Make Homemade Peach Pie Filling Without Cornstarch

    I can't emphasize enough just how easy this healthy Peach Pie Filling is!
    You only need a handful of ingredients and about fifteen to twenty minutes. Follow the steps below or watch the video.

    What You Will Need

    Equipment

    • Stovetop to stew and thicken the peaches.
    • Medium saucepan to fit one batch of this recipe.
    • A wooden spoon for stirring and preventing sticking.

    Ingredients

    • Fresh peaches offer the juiciest, freshest flavour. However, frozen peaches will also work.
    • Pure maple syrup offers natural sweetness with rich caramel notes and helps to create the ooey-gooey texture.
    • Arrowroot flour acts as a starch, helping to thicken the syrup and juices, contributing to a thick, gooey texture.
    • Ground cinnamon offers a sweet eartchy flavour that complements the sweetness of the peaches.
    • Pure vanilla extract provides an uplifting flavour that balances out the rich and earthy flavours.

    Step 1: Slice Peaches

    Since this recipe uses fresh peaches, you will first need to slice or chop your peaches. I typically cut them into larger slices, as you would for a traditional peach pie. However, bigger slices can be challenging to stuff into hand pies. In that case, I find that chopping them into small cubes works best.

    Step 2: Combine Ingredients

    Next, add the sliced or chopped peaches to a medium saucepan. Then, add in the ground cinnamon, pure maple syrup and vanilla extract. Place over medium-low heat and mix well.

    Once the juices begin to release, add the arrowroot flour.

    Step 4: Simmer

    Continue to heat, stirring frequently, until the juices begin to bubble.

    Once bubbling, reduce the heat to low and simmer for about 10 minutes or until the mixture has thickened. Keep stirring consistently to prevent sticking.

    Step 5: Cool

    Once your Fresh Peach Pie Filling has thickened, remove it from the heat and allow it to cool before handling.

    If you plan to bake with this Peach Pie Filling, leave it on the runnier side, as it will thicken further during baking. But if you will be using it for no-bake goodies, like overnight oats, allow it to thicken as much as you desire.

    Notes

    When making hand pies or smaller pastries, I find chopping the peaches into small cubes is easier to work with.
    For additional thickening, you can add an extra 1 -2 tablespoons of arrowroot flour.
    To store this Peach Pie Filling, allow it to cool fully before sealing in an airtight container and refrigerate for up to 7 days. It can also be stored in the freezer for up to 3 months.
    Tapicoa flour can be substituted for the arrowroot flour.
    Frozen peaches can be used in place of fresh peaches.
